Interesting Crema

Not a particularly fantastic photo of an espresso shot, but a very interesting one...





The sign of a great expresso shot is it has a long lasting thick crema.

Most ordinary coffee crema's have dissipated after a a minute or two.
This short cup had been left on our cupping bench.
It was picked up, it was cold, but still had this crema on it
.....after 45 minutes.
Now thats a great coffee. Get on board.
